Description

Ingredients

  • 1 and 1/4 cup peanut butter
  • ¼ cup maple syrup or honey
  • ¼ cup powdered sugar
  • ¼ cup almond flour
  • 1 tsp vanilla extract
  • ⅛ tsp salt
  • 1 cup chocolate chips
  • 2 tsp coconut oil


Instructions

  1. In a large bowl, combine peanut butter, maple syrup, powdered sugar, almond flour, vanilla extract, and salt. Beat together with a handheld electric mixer until evenly mixed.
  2. Scoop the mixture into 1.5-inch balls and shape them into egg forms using your hands. Set aside.
  3. Melt the chocolate chips in a bowl using a microwave, in 30-second intervals, stirring in between until smooth.
  4. Dip each peanut butter egg into the melted chocolate until fully coated. Remove any excess chocolate, then place on parchment paper to cool. Optionally, drizzle melted chocolate on top for added decoration.

Notes

Ensure the peanut butter is creamy for the best texture.
Store any leftovers in an airtight container in the refrigerator for up to a week.
Feel free to use dark chocolate for a richer flavor.
