Description

This Chicken Rice Casserole with Broccoli is a delightful blend of tender chicken, creamy soup, and perfectly cooked broccoli. It’s quick to prepare and ideal for a comforting meal that the whole family will love.


Ingredients

  • 4 chicken breasts, halved and diced
  • 2-3 tablespoons olive oil
  • 4 cups cooked rice
  • 2 (10.5 ounce) cans cream of chicken soup
  • 12 ounces cooked broccoli
  • 1 cup milk
  • 2 eggs
  • 1 cup cheddar cheese, optional
  • garlic salt, to taste
  • pepper, to taste


Instructions

  1. Heat a skillet over medium heat and add the olive oil and diced chicken. Season with garlic salt and pepper.
  2. In a large bowl or in the casserole dish, combine cooked rice, cooked chicken, cooked broccoli, cream of chicken soup, milk, and eggs. Mix until well combined.
  3. Top with shredded cheese if desired.
  4. Bake at 350°F for 20-30 minutes until bubbly.

Notes

Feel free to substitute other vegetables if desired.
For a lighter version, use low-fat or fat-free cream of chicken soup.
