- 4 chicken breasts, halved and diced
- 2-3 tablespoons olive oil
- 4 cups cooked rice
- 2 (10.5 ounce) cans cream of chicken soup
- 12 ounces cooked broccoli
- 1 cup milk
- 2 eggs
- 1 cup cheddar cheese, optional
- garlic salt, to taste
- pepper, to taste
Instructions
- Heat a skillet over medium heat and add the olive oil and diced chicken. Season with garlic salt and pepper.
- In a large bowl or in the casserole dish, combine cooked rice, cooked chicken, cooked broccoli, cream of chicken soup, milk, and eggs. Mix until well combined.
- Top with shredded cheese if desired.
- Bake at 350°F for 20-30 minutes until bubbly.
