- 2 cups boiling water
- 2 tbsp chai masala
- 2 inch knob fresh ginger, smashed
- 1/4 cup white granulated sugar
- 5 large egg yolks
- 1/2 cup white granulated sugar
- 1/2 tsp ground cardamom
- 1/4 tsp salt
- 1 tbsp vanilla extract
- 16 oz mascarpone cheese, cold from the refrigerator
- 1 1/2 cups heavy cream, chilled
- 28 hard ladyfingers
- 1 tbsp ground cinnamon
- 3/4 tsp ground cardamom
- 3/4 tsp ground ginger
- 1/4 tsp allspice
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
Instructions
- Bring water to a boil, then add chai masala and smashed ginger. Simmer for 3 minutes and let it steep off the heat for another 3 minutes.
- Stir in 1/4 cup of sugar into the chai mixture until dissolved. Strain the liquid and cool to room temperature.
Notes
For a richer flavor, let the tiramisu chill for at least 4 hours before serving.
You can substitute the chai masala with your favorite spice blend if preferred.
