- 12 Roma tomatoes, halved lengthwise and seeded
- 1/4 cup extra virgin olive oil
- 1 1/2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 2 teaspoons granulated sugar
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon fresh ground black pepper
- 8 ounces fresh mozzarella cheese
- Fresh basil leaves, thinly sliced
Instructions
- Preheat the oven to 275°F and line a large rimmed baking sheet with parchment paper.
- In a large bowl, combine the halved tomatoes, minced garlic, sugar, kosher salt, and black pepper. Add extra virgin olive oil and balsamic vinegar, then toss gently until the tomatoes are well coated.
- Place the tomatoes cut-side up on the prepared baking sheet in a single layer, spooning any leftover oil and vinegar mixture on top.
- Bake for 2 hours, until tomatoes are shriveled around the edges and lightly caramelized. Allow to cool to room temperature.
- Slice mozzarella into pieces just under ½-inch thick and cut each slice in half.
- On a serving platter, alternate layers of roasted tomatoes and mozzarella. Top with sliced basil.
- If desired, drizzle with extra olive oil and sprinkle with black pepper before serving.
Notes
Use ripe and flavorful tomatoes for the best taste.
Serve at room temperature for maximum flavor enjoyment.
