Description

These Buffalo Chicken Meatballs are packed with flavor and made with simple ingredients like ground chicken and buffalo sauce. They are a perfect choice for quick dinners, appetizers, or game-day gatherings, and pair wonderfully with blue cheese dip.

  • 1 pound ground chicken
  • 1/2 cup panko
  • 1/3 cup shredded carrots
  • 1/3 cup chopped green onions
  • 1/4 cup chopped fresh parsley
  • 1/4 cup buffalo wing sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/3 cup buffalo wing sauce
  • blue cheese dip


Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper or grease it lightly.
  2. In a large bowl, combine ground chicken, panko, shredded carrots, green onions, parsley, buffalo wing sauce, garlic powder, onion powder, paprika, kosher salt, and black pepper. Mix gently until just combined without overmixing.
  3. Form the mixture into 2-tablespoon sized meatballs and place them on the baking sheet with some space in between.
  4. Bake for 18 to 22 minutes, or until cooked through, reaching an internal temperature of 165°F.
  5. Prepare the blue cheese dip in a food processor while the meatballs bake.
  6. Transfer the hot meatballs to a large bowl, add ⅓ cup of buffalo sauce, and gently toss to coat. Optionally, broil for 1 to 2 minutes for crispy edges.
  7. Serve the warm meatballs with blue cheese dip on the side.

Notes

These meatballs can be made ahead of time and stored in the refrigerator or freezer.
Adjust the amount of buffalo sauce to your preferred spice level for a milder or hotter dish.
