Description

This Basil Watermelon Salad boasts a delightful combination of fresh watermelon, cucumbers, and strawberries, tossed in a zesty vinaigrette. It’s an easy, flavorful dish that will elevate any gathering and is perfect for a quick, health-conscious meal.


Ingredients

  • 5 cups watermelon, cubed
  • 4 persian cucumbers, sliced
  • 1 cup fresh strawberries, halved or quartered
  • 1/2 red onion, sliced
  • 1 jalapeño pepper, seeded and diced
  • 1/2 cup toasted pistachios, chopped, plus more for garnish
  • 8 oz feta cheese, crumbled, plus more for garnish
  • 1/3 cup fresh basil, chopped
  • 1/2 shallot, peeled and finely minced
  • 2 cloves fresh garlic, finely minced
  • 1/4 cup extra-virgin olive oil
  • 1 lime, zested
  • 1/4 cup fresh lime juice, about 2 limes
  • 2 tbsp honey
  • salt and pepper, to taste


Instructions

  1. Cut the watermelon into bite-sized cubes and slice the strawberries, cucumbers, and red onion; place them in a large bowl.
  2. Add the remaining salad ingredients.
  3. In a separate bowl, whisk together the lime zest, lime juice, garlic, shallot, and honey to create the vinaigrette.
  4. Slowly drizzle in the olive oil while whisking constantly until combined. Season with salt and pepper.
  5. Pour the dressing over the salad and gently toss to coat all ingredients evenly.
  6. Transfer the salad to a serving bowl or platter. Garnish with extra pistachios, basil, and crumbled feta if desired. Serve immediately or refrigerate for a few hours for enhanced flavors.

Notes

For optimal freshness, serve the salad soon after preparation.
Feel free to add other fruits or adjust the ingredients based on what you have on hand.
