Description

This Bananas Foster French Toast brings together fluffy challah bread, ripe bananas, and a sweet rum sauce for a delightful breakfast! Perfect for gatherings or a comforting weekend treat.


Ingredients

  • 10 oz challah bread, sliced 1 inch thick
  • 7 large eggs
  • 1 ½ cups fat-free milk
  • 1 ½ teaspoons vanilla extract
  • ½ teaspoon cinnamon
  • ¼ cup sugar
  • ¼ teaspoon salt
  • 1 teaspoon meyers rum or rum extract, optional
  • 1 tbsp whipped butter
  • ½ cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 tbsp meyers rum or 1 tsp rum extract, optional
  • 4 medium ripe bananas, sliced


Instructions

  1. Spray a 13 x 9-inch baking dish with cooking spray.
  2. Arrange bread slices in a single layer in the dish, squeezing them slightly to fit.
  3. In a large bowl, whisk together eggs, milk, vanilla, ½ tsp cinnamon, monk fruit or sugar, salt, and optional rum extract until combined. Pour evenly over the bread, cover, and refrigerate for at least 8 hours or overnight.
  4. Preheat oven to 350°F and bring the bread to room temperature.
  5. Bake uncovered in the middle of the oven until puffed and edges are pale golden, about 40 to 45 minutes.
  6. While it bakes, melt the butter in a large deep skillet over low heat.
  7. Add brown sugar, cinnamon, vanilla, and optional rum extract to the skillet, stirring until the sugar dissolves. Add water if needed and let the mixture simmer for about 2 minutes until thickened.
  8. Add sliced bananas to the skillet and simmer for 1 minute, then remove from heat.
  9. Keep the banana mixture covered until the French toast is ready. Serve the French toast topped with the bananas.

Notes

Challah bread works best, but you can use brioche as an alternative.
For a healthier option, substitute regular sugar with monk fruit sweetener or sugar-free alternatives.
Allow the mixture to chill overnight for optimal flavor and texture.
