- 3 medium russet or yukon gold potatoes, washed and scrubbed (or use 4 smaller potatoes)
- 1 tbsp olive or vegetable oil
- ¼ tsp salt
- ¼ tsp black pepper
- 2 cups shredded cheddar cheese
- 6 slices pork bacon, cooked and chopped
- 1-2 green onions, chopped
- optional: italian seasoning, oregano, or red pepper flakes for extra flavor
Instructions
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with aluminum foil, then add a sheet of parchment paper on top.
- Arrange bacon slices on the parchment paper and bake for 10-15 minutes, flipping once if necessary, until they are golden and crispy.
- Transfer the bacon to a plate lined with paper towels and allow it to cool. Once cooled, chop the bacon into small pieces.
