- 4 boneless skinless chicken breasts (10-12 ounces each)
- 2 tablespoons kosher salt
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon ground black pepper or white pepper
- 1 tablespoon herbes de provence
Instructions
- In a large bowl, stir 4 cups of room temperature water with the kosher salt until dissolved. Submerge the chicken breasts completely in the brine and cover with plastic wrap for 30 minutes.
- Preheat your oven to 425°F. Take the chicken out of the brine, discard the brine, and pat the chicken dry using paper towels. Brush both sides with olive oil.
- Place the chicken on a parchment-lined sheet pan. In a separate small dish, mix together garlic powder, smoked paprika, and pepper. Generously dust both sides of the chicken with this seasoning blend and sprinkle with herbes de provence.
- Bake the chicken for 16-18 minutes, or until the internal temperature reaches 157°F when checked with an instant-read thermometer in the thickest part. Upon removal from the oven, loosely cover with foil and let it rest for 8-10 minutes to allow the temperature to rise to 165°F.
