Description

This Baileys Irish Cream Tiramisu brings together creamy mascarpone, rich coffee flavors, and a touch of cocoa. It’s an easy homemade dessert that’s sure to impress at special gatherings or a cozy dinner at home.


Ingredients

  • 16 oz (454 g) mascarpone cheese
  • ¾ cup (180 ml) baileys irish cream divided
  • 6 large egg yolks
  • ¾ cup granulated sugar
  • 16 oz (480 ml) heavy whipping cream
  • 2 tsps (10 ml) vanilla extract
  • 1 cup (240 ml) espresso or very strong coffee, cooled
  • 40 ladyfingers cookies
  • 2 tbsps (10 g) unsweetened cocoa powder


Instructions

  1. In a large mixing bowl, blend mascarpone cheese with ½ cup of Baileys Irish cream until smooth and set aside.
  2. Establish a double boiler with a heat-safe bowl over gently simmering water. Add egg yolks and granulated sugar; whisk for 5-7 minutes until thickened and lightened in color.
  3. Slowly whisk the warm egg yolk mixture into the mascarpone mixture until smooth and fully combined.
  4. In another bowl, whip heavy cream with vanilla extract until medium peaks form and the cream holds its shape.
  5. Gently fold whipped cream into the mascarpone mixture in two additions to maintain fluffiness. Set aside.
  6. In a shallow bowl, mix cooled espresso with the remaining ¼ cup of Baileys Irish cream.
  7. Briefly dip each ladyfinger into the espresso mixture, allowing excess to drip off. Lay them in a single layer in a casserole dish.
  8. Spread half of the mascarpone mixture over the ladyfingers evenly.
  9. Create a second layer with more dipped ladyfingers followed by the remaining mascarpone mixture, smoothing the top.
  10. Dust the top with cocoa powder using a fine mesh sieve or sifter.
  11. Cover tightly and refrigerate overnight before serving.

Notes

For an extra kick, add more Baileys to the mascarpone mixture.
Letting the tiramisu sit overnight enhances the flavors significantly.
Use a good quality espresso for the best flavor.
